"In a medium mixing bowl, combine all dry ingredients. In a separate small bowl, combine pumpkin, stevia extract (if liquid - if powder or granulated, add to dry ingredients) and pure vanilla extract. Add to dry ingredients and mix thoroughly until well incorporated. Freeze mixture for about 30 minutes. Roll into 1 ½" balls and press into desired toppings to create an even coat. Freeze extras in an airtight container for grab-and-go snacks, clean desserts and pre/post workouts."
Pumpkin N 'Spice Fit Bite Truffles blend oats, non-whey protein, cocoa, canned pumpkin, pumpkin pie spice, dark cacao chips, vanilla and stevia into chilled, rollable energy bites. Dry and wet ingredients are mixed separately, combined, chilled, then rolled into 1½-inch balls and coated in toppings such as crushed walnuts, slivered almonds, shredded coconut, cocoa or rice crisps. Extras store frozen for quick snacks, pre/post workouts or clean desserts. An optional dip in melted solid dark chocolate with flaky sea salt creates a richer treat, and chocolate chips are discouraged because stabilizers prevent smooth melting.
