
Beef consommé is clarified beef stock with a more concentrated flavor than beef broth, allowing strong umami infusion into roast beef. French onion soup adds aromatics and caramelized onion notes that balance the consommé’s richness. To use the method, combine one can each of beef consommé and French onion soup with one can of water in a pot, heat over medium until hot, then soak the roast beef for a few minutes before assembling. Higher-quality ingredients improve results, with eye of round or top round recommended, or fresh sliced deli meat as a faster alternative.
