Celebrity pastry chef Dominique Ansel has launched a new French-Asian bakery named Papa d'Amour in Greenwich Village, inspired by his Taiwanese wife and their children. The bakery features unique treats like taro mochi donuts, scallion basil blossoms, and fresh shokupan, but notably omits his iconic Cronut. In a conversation with WNYC's Alison Stewart, Ansel shared insights on his creative process and the intentional development of this new venture over nearly two years, reflecting on the cultural blend each item represents and the excitement of the shop's imminent opening.
"I think the beauty of it is embracing all the cultures and bringing them together to create something new," said Ansel.
"It takes time, from thinking of the concept to, of course, physically building the shop, to testing the menu, sourcing the right equipment, hiring the staff."
