"Sarda also gave us other great tips for preventing bitterness in green tea. He said that another important factor to consider is the weight of the tea leaf, as "using too much tea for the amount of water will guarantee a bitter cup." He says a ratio of "2 [grams per] 7 [ounces of] water is ideal for [a] perfect brew.""

Water temperature between 70 and 80°C (158–176°F) is crucial to prevent bitterness and preserve flavor. Excessively hot water can scorch leaves and release tannins that cause a bitter taste. Use about 2 grams of tea per 7 ounces of water for an optimal brew. A candy thermometer can help achieve the correct temperature. Avoid distilled water when brewing to maintain flavor quality and unlock health benefits without added bitterness.
