A TGI Fridays cook reportedly created potato skins in 1974 by deep-frying leftover scooped-out potato, seasoning it, and topping it with shredded cheese and bacon. Chicago’s R.J. Grunts offered potato skins from its 1971 opening, and The Prime Rib served them in the early 1970s as well. R.J. Grunts’ co-founder Richard Melman said the item sold only about ten orders per day and that the starchy centers were used for cottage fries. Melman said potato skins served as a way to use extra ingredients and that he was influenced by health.
