Silo began in Brighton in 2014 and relocated to Hackney Wick, East London, in 2019 above Crate Brewery on the River Lee Navigation. The restaurant operated a strict zero-waste model with no bin, upcycled furniture and an on-site fermentarium, churning butter, rolling oats and practising a root-to-leaf approach to maximise animal and vegetable use respectfully. Founder Douglas McMaster announced the closure on Instagram, describing Silo as an idea and a zero-waste blueprint that was never meant to be static. The team plans a Silo World Tour of collaborations and pop-ups to spread the philosophy. The last service will take place on December 20.
