After years of refining his culinary skills in Portland, Chef Vedran Jordan is slated to open Alma, a permanent restaurant in summer 2025. Named after his mother, Alma will offer a diverse menu inspired by family recipes and Ottoman-era dishes, with an emphasis on Halal meat sourced from head to tail. Jordan, a Bosnian refugee, aims to educate patrons on Balkan cuisine and culture, reflecting on the complexities of his home region's history. The restaurant will also boast a unique drink menu featuring Balkan wines and house-fermented liqueurs.
"I always wanted to bring the food of my culture and the food of my family into Portland, [to] showcase and educate people on the Balkan region."
"You always need snacks when you drink," Jordan says, discussing the importance of pairing rakia with pickled vegetables.
