Mariscos Los Corchos is set to debut a dedicated pescado zarandeado trailer in Bloomington, California, aiming to offer an authentic taste of Nayarit-style barbecued fish. Chef Anthony Plascencia has faced challenges, including city regulations and short-lived pop-up experiences. This new mobile kitchen is fully permitted and features a mesquite grill, allowing for traditional cooking methods. Plascencia's offerings will include whole fish, octopus, shrimp, grilled quail, and carne asada, served with tortillas and house-made salsas.
"We are the first ones to use this style of trailer for pescado zarandeado that's fully permitted, street legal," says Plascencia.
"The mobile kitchen opens up to function as a prep area, service station, and mesquite grill for pescado zarandeado, all designed by Riverside-based AA & G Food Trucks."
