Mid-2022 is when Mullvad stopped auto-renewing subscriptions and got rid of PayPal integration altogether, but people who had signed up before then had the option to leave auto-renewal on. If you're in this group, cancelling is simple. Just sign into your account page, click on the word Subscriptions, then click Unsubscribe."
Mullvad VPN uses a prepaid model at a constant €5-per-month rate and does not automatically renew subscriptions for new accounts. Funds are drawn monthly from the prepaid balance until it is depleted, so stopping payments effectively cancels the service. Accounts created before mid-2022 may still have auto-renew enabled and can be canceled by signing into the account page, selecting Subscriptions, and choosing Unsubscribe. Subscriptions purchased through app stores must be canceled through the store: on iOS use Settings > [your name] > Subscriptions, and on Android use the Google Play Store account Payments & Subscriptions flow to cancel.
