Griot is considered a national dish of Haiti and all it takes is a taste to understand why. Adored by José Andrés, this dish is a wonderful mix of cooking techniques; marinated pork shoulder is slowly braised and then fried, leaving the meat tender and flavorful.
You can skip the entire cumbersome step of straining your rice by placing a fine mesh sieve or strainer on top of your pot and pouring the rice directly into it, rather than into the water. Leave the sieve in the pot for the whole cooking process with a cover placed on top. The steam rising from the water will cook the rice, giving you a perfectly separated, airy result.
That was Temaki, a small counter spot inside Brixton Village that we loved for its great quality and great value temaki sets. Owner A.M Dupee, who is relocating the restaurant to a larger central London site this March, sees the "huge potential in the growth of handrolls in the UK", saying that "handroll bars give operators the ability to give customers the balance of high quality produce in a convivial atmosphere without the price tag of an expensive sushi or omakase meal."
Soaked and blended, cashews become a stand-in for heavy cream, keeping stuffed shells, soups, pasta sauces, and desserts luxuriously dairy-free. Toasted and roughly chopped, they add crunch to salads, curries, stir-fries, and more. There are so many reasons to love cooking with these seeds-that's right, "cashew nut" is technically a misnomer, since they grow outside the fruit rather than inside a hard shell like true nuts.
A true one-pot meal, this Indian-spiced rice is made with store-bought spicy simmer sauce, paired with tofu and cauliflower. It's hearty, filling and you can load it up with a range of herbs or crunchy nuts as toppings. We are staying in a little loft in San Francisco right now, trying to find our next place to live. The kitchen is tiny: two electric burners, a microwave, roughly 2 feet of counter space.
"Even just a few minutes makes a difference," Daud explains. "Resting lets the excess steam escape and gives the starches time to settle, so the rice ends up fluffy instead of wet or clumpy." Daud adds that the go-to time is 10 minutes for a standard amount of rice, but larger batches can require a longer rest. "If I'm making a bigger batch for a dinner party," she says. "I usually give the rice around 30 minutes to rest." However, when making certain "cultural dishes" like maklouba, Daud notes that she will "let it rest up to an hour or even a bit more before serving."
Don't be intimidated by fresh mushrooms. They are prized for their flavor and versatility. Look for firm mushrooms that are free of soft spots or mold. Wash them just before using them but be sure to store them unwashed. Never submerge in water to wash them because mushrooms absorb like a sponge and become mushy. Wipe with moist paper towels. Some prefer to clean them with a soft-bristled mushroom brush. If extremely dirty, they can be very briefly dunked into cold water and wiped dry.
That said, there's an excellent alternative to lengthy pro-level sushi creation: A no-roll version called inari, or commonly, inarizushi. It's named after the Shinto deity Inari Okami, the god of rice, agriculture, and prosperity. Traditional inari bypasses the usual seaweed and raw fish, opting instead for seasoned sushi rice tucked inside a sweet and savory "aburaage" pouch made from fried tofu.

We asked the chef for tips on sushi-making (known as one of the most difficult culinary techniques to master) so that our next batch of caterpillar rolls look more professional than problematic.
Because fried rice already contains scrambled eggs, vegetables, and usually meat, you can customize your dinner-inspired dish with all the breakfast staples you enjoy most. For example, use the residual grease from frying up bacon or sausage as the base fat in which to fry your vegetables and cooked rice. Add a portion of butter or olive oil to the mix as needed.
Jasmine rice gets toasted until fragrant and lightly golden, then it's cooked with coconut milk to yield a supremely nutty base for the salad. Fluffy toasted rice meets crunchy slaw and seared tofu in my gingery, toasted rice salad. When you toast grains of rice until fragrant and golden, it takes on this nutty flavor that adds complexity to whatever you're making.
Barley, the grain that is featured in this dish, is one of our most nutritious grains; it contributes protein, thiamine and niacin. Barley also is a rich source of dietary fiber. For a vegan rendition, use vegan yogurt and maple syrup instead of honey in the dressing and use olive oil instead of butter when sauteing the mushrooms. The dish is a main course salad and should be served at room temperature.
Christmas is lovely, but my kids think Chinese new year is by far the best holiday. I might be biased, but, unusually, I am inclined to agree with them. As my eldest puts it, New clothes, cash, booze and food what's not to love? There's the added bonus that cash is absolutely more than acceptable in fact, it's de rigueur, so there's no shopping for mundane socks and smelly candles. Chinese new year is full of rituals and, just as at Christmas, every family has its own, but they are all variations on a theme. Symbolism looms large in Chinese culture, and at new year it centres around messages of prosperity, luck and family.
