IndiHen, a pop-up restaurant in Boston founded by Tarun Bangalore and Micah Hetrick, aims to make Indian flavors more approachable through fried chicken. The duo, who met at the Culinary Institute of America, focuses on a fried chicken sandwich marinated in traditional Indian spices, such as buttermilk brine infused with ginger and garlic. Their sides, including saag greens and tadka mac and cheese, combine Indian spices with soul food elements. The first pop-up was a success, selling out its curry-inflected sandwiches, showcasing the potential for Indian cuisine to be popularized in a familiar format.
The idea behind IndiHen is to make Indian flavors more accessible for people who aren't as familiar with the country's encyclopedic range of spices and cooking techniques.
Our fried chicken sandwich is buttermilk brined with a ginger-garlic paste, which is a very traditional marinade for a lot of Indian meats.
