Brooklyn Kura introduced Kura Shochu, a rice-based spirit crafted from sake kasu, on July 1. Sake kasu are the rice remnants from sake fermentation, traditionally used in Japan for cooking, pickling, and skincare. Co-founder Brian Polen emphasized the potential of using abundant sake kasu to create a high-quality spirit. Kura Shochu contains 40% ABV and is available for purchase at the Brooklyn Kura taproom located in Industry City.
