Papaver Roaster House opened in Olympia inside a 1,400-square-foot space designed with golden accents, white stone, soft lighting, natural wood and luxurious cushions. The family-run shop roasts coffee on-site and produces baked goods from Ukrainian family recipes in a 4,000-square-foot off-site production facility in Lacey. The cafe features a long crystal-clear pastry case on a white quartz bar, a community table, smaller tables, lounge chairs and a commonly used chessboard. Co-owners David and Elona Sherepitka work with head roaster Ilya Kushnirenko and baker Luybov Sherepitka to present specialty coffees and traditional Eastern European sweets, including a popular honey cake recipe.
