Scotland's sleekest whisky distillery finally has a fancy destination restaurant to match
Briefly

Inverness and its surrounding areas, historically overshadowed by whisky tourism in the 20th century, have transformed into a hub for whisky enthusiasts by 2025. With over 51 distilleries in Speyside now welcoming visitors, the region’s charm is exemplified by The Macallan distillery. Known for its stunning architecture, designed by Rogers Stirk Harbour + Partners, The Macallan showcases a contemporary whisky experience amidst expansive natural landscapes. However, it faces a challenge due to the absence of a high-end dining option, unlike other distilleries in the region.
In the 20th century, whisky tourism wasn't really a thing. But in 2025, most of the 51 distilleries in Speyside now welcome visitors from around the world.
The Macallan has done more to make whisky into a 'destination drink' than any other distillery with its extraordinary new building and extensive grounds.
The extraordinary distillery building, designed by Rogers Stirk Harbour + Partners, features a gently curving, turf-covered roof and dramatic interior lighting.
Despite having a brasserie, one major element missing at The Macallan was a luxurious dining venue to complement its fine whisky offerings.
