Ultra-High Temperature (UHT) milk, also known as long-life milk, is sterilized by heating to about 280°F for two seconds, killing almost all bacteria. This process allows UHT milk to remain shelf-stable for up to nine months when unopened. Although UHT milk tastes slightly sweeter than regular milk and has a creamier texture, it has a comparable nutritional profile, with minimal losses in micronutrients. Once opened, UHT milk should be treated like regular milk, as it will spoil in about seven days.
