Vaca will open on the ground floor of the Beaudry in Downtown Los Angeles, marking a northward expansion after twenty years in Orange County. The menu will transfer roughly 80% of existing Orange County dishes to the LA location while reserving about 20% to adapt to local preferences. The wine list will remain Spanish-focused with additional domestic Spanish varietals. The Beaudry sits among offices, hotels and residential towers and is the tallest residential building in California. The new dining space will differ from the Costa Mesa layout, with designers making the ceilings appear higher. Los Angeles diners are viewed as more adventurous and open to new ideas compared with many Orange County diners.
