Hai Le's passion for pho intensified after tasting a uniquely flavorful bowl in California. Upon returning to Maryland, he searched for local pho restaurants and sought guidance from chefs in Vietnam. His girlfriend's father's recipe further fueled his obsession, leading him to experiment with various ingredients and techniques. During the pandemic, he launched a pho meal kit business and has since opened PhoXotic in Bloomingdale, focusing on high-quality, halal beef sourced directly from meat processors for his enhanced pho experience.
I want people to get the same reaction when they eat the pho that I had in Cali. I still remember it.
I go where the butchers go. Because of that, I'm able to have a more consistent product.
