"Over the last 18 months, chef Eric Wan (ex-Dinner by Heston) has been popping up around town (and in Paris and Shanghai) with Lá Lốt. The modern Vietnamese concept is inspired by his Chinese-Vietnamese background and his mother's birthplace of Chợ Lớn in Saigon, and it's where he's been doing his twist on traditional ingredients and street food dishes. Now he's partnering with the team behind dan's in Dalston to open Tempo on Paradise Row in Bethnal Green."

Chef Eric Wan (ex-Dinner by Heston) has been operating the modern Vietnamese concept Lá Lốt through pop-ups in London, Paris and Shanghai, drawing on his Chinese-Vietnamese heritage and his mother's Chợ Lớn roots. He is partnering with the team behind dan's in Dalston to open Tempo on Paradise Row in Bethnal Green, occupying one of the arches toward the end of 2025. The menu will feature items such as whipped tofu with braised aubergine, Chalk Stream trout with nước mắm, prawn toast, and chicken & lemongrass sa tế. The wine list will rotate between approachable bottles and serious selections from Europe, Australia and beyond, with staff recommendations and food pairings. A preview takeover at Carousel runs Fri 17th & Sat 18th October.
