Wheel of 20th-century Italian cheese smashes record for oldest parmesan
Briefly

A 27-year-old wheel of Parmigiano Reggiano, produced in 1998, has set a new longevity record for the cheese category, weighing 36kg and valued over 20,000 euros. Opened and tasted recently, it surpassed the previous record of 21 years. Romano Camorani, its maker, expressed pride over its quality after years of care. Parmigiano Reggiano's EU designation ensures it is crafted under specific conditions, resulting in unique flavors that deepen with age. This rarity exemplifies the synergy between traditional cheesemaking and time, echoing the cheese's authenticity and remarkable journey without preservatives.
The aroma and taste were out of this world... I still lovingly looked after the wheel as it aged, despite no longer making cheese.
The opening of Camorani's wheel marked an extraordinary moment. It demonstrates how this product can remain amazing over time without the use of preservatives.
Long-aged parmesan is then tasted by a panel from the Parmigiano Reggiano consortium and only considered authentic if judged to be edible and up to standard.
The larger a parmesan wheel is, the more chance it has of ageing for longer... The longer the parmesan matures, the more intense its flavour.
