There's text and then there's text
Briefly

text/plain is the simplest type of email, offering limited formatting and no control over fonts or layouts, while text/html allows for rich content with images and styled text.
With text/plain, you cannot include images or track opens, and links must be shown in full without hyperlinking. However, you can include emojis using any character set.
text/html provides the possibility to create visually appealing emails using CSS, complex layouts, and multimedia, making it suitable for marketing and designs that require customization.
Formatting in text/plain can be managed to some extent using 'format=flowed', allowing text to adapt to the viewer's client width, though it lacks full control.
