St. Jardim has revived the Fedora restaurant, a historic basement dining spot in New York's West Village. Originally a speakeasy, Fedora has transformed several times over the decades. Following its pandemic closure, partners Christa Alexander and Andrew Dete, along with wine director Basile al Mileik, took over the space. They aimed to honor Fedora's legacy while integrating Post Company’s minimalistic design approach that highlights the venue's unique architectural features. The renovation preserved Fedora's eccentricities, focusing on coherence and enhancing the dining experience instead of modernizing it excessively.
"At first, we saw the opportunity to take over an iconic space, but the more we worked in it, the more we felt like we were really the stewards of it, and maintaining the Fedora name just felt right."
