Baekjeong, a top Korean barbecue chain, has reopened in Koreatown after a year and a half closure. The new location boasts a lively design inspired by Seoul’s street dining culture. Plans include an in-house dry-aging program for meats and a cocktail bar specializing in Korean spirits. Established in 2003 by Kang Ho Dong, the chain has a storied history and aims to improve upon its previous offerings. The move from Chapman Plaza highlights the challenge of maintaining presence in a vibrant but competitive market.
"It's designed to make you feel like you're sitting outside having barbecue," said Samuel Kim, the senior director of operations. "In Korea there's a lot of little neighborhoods where the restaurants will set up grills and people will just be eating and drinking all night outside in the street."
"We would have loved to have been able to stay in Chapman Plaza, because that turned into a little bit of the heart of K-town, but unfortunately we couldn't hold on to that spot," said Kim.
