New York was the only place we wanted to be in America. New York is full of amazing bars, but we still think we have something to bring, which is maybe less true in Europe, because our style of hospitality and our vision of bars and of cocktail creation is really European.
We were always told, when people would come and visit the bar in Barcelona, that it looks like a spot in New York or feels like a spot in New York. When we were planning and looking at what we wanted to do and where we wanted to be, New York just felt so right.
In Europe you don't have fixed positions like, 'Oh, you're the host,' or 'You're the bartender.' There’s a fluidity to roles that allows for a more dynamic interaction with guests.
Our approach to Instagram is to create our own eccentric, original content that reflects who we are. It's crucial for us to build a brand that feels authentic.
