Splatters during frying occur when water from food mixes with hot oil, prompting steam to cause excessive cracking and bubbling—that's where salt helps absorb excess moisture.
While the salt trick is effective for shallow frying methods like sautéing and pan-searing, it does not work for deep frying where different techniques are required.
To prevent oil splatters in deep frying, use the drop technique. Gently place food in the oil instead of launching it in from a distance.
