Written Hand has officially become a permanent fixture in the Kimpton Everly Hotel, evolving from a Mediterranean-inspired pop-up to a California fresh dining experience. Led by executive chef Ashley Thompson and mixologist Naomi Schimek, the restaurant features a menu that emphasizes local, seasonal ingredients sourced from farmers markets. Signature dishes include head-on Hawaiian prawns and grilled tuna collars, both of which showcase the rich flavors of Southern California. Head on prawns...they are served with smoked oranges with chermoula, which is the Mediterranean version of chimichurri. The prawns just have that really sea, briny ocean flavor.
Grilled tuna collar...it's a fatty piece of tuna that's marinated with harissa paste...you have this really intense and fresh tuna flavor.
