Raon, a new Korean restaurant set to open in New York on March 4, aims to elevate kimchi as a central element of its tasting menu. Co-owned by chef Soogil Lim and Saook Youn, the restaurant will offer a high-end dining experience featuring a 10-course tasting menu priced at $225. The chefs will showcase various types of kimchi, pairing them thoughtfully with creative dishes, demonstrating their cultural significance beyond a mere side dish. Reservations will be available on Resy starting February 18.
Raon’s goal is to showcase the full breadth of the fermented dish through kimchi pairings, akin to how wines are paired with dishes.
