The sensory experience starts with a bouquet of cinnamon and allspice in the aroma, and at first those are the dominant flavors on the palate, too. But soon, spicy notes give way to tingling sensations that build and build until the whole tongue feels numb, almost like it's vibrating. Stick with it for just a couple of brave moments and the experience will peak before mellowing out and returning your mouth back to normalcy.

Kings County Distillery, founded in 2010 by Colin Spoelman and David Haskell, produces a variety of whiskeys including bourbon, rye, and American single malt.

Join Head Distiller Jason Tripp in the coastal haven of Pacifica, where each drop of magic is handcrafted from all-organic ingredients. The old-school 220-gallon still, running at its own unhurried pace, ensures a symphony of flavors as the spirits and the still engage in a slow dance of perfection.

Hops have such a dynamic aromatic profile, and we saw an opportunity to bring something genuinely unique to the gin category. At its heart, gin is all about botanical expression and we wanted to explore what hops could bring.
