Brooklands, The Peninsula hotel's Michelin star restaurant, will pause operations for two months, offering a new concept named Soleil by Claude for summer. This seasonal menu focuses on Mediterranean dishes ideal for outdoor dining. Offerings include tarama with cured egg yolk and crab, grilled Dover sole, and a slow-cooked lamb shoulder for two. An array of summer cocktails and the hotel’s own champagne will complement the dining experience. Reservations are open until 31st August 2025, when Brooklands will resume the traditional dining experience.
