This cranberry upside-down cake, from the kitchen of recipe developer Jennine Rye, utilizes the oft-overlooked cranberry as a vibrant, alternative topping to the classic upside-down cake, giving the retro favorite a new lease on life. The deliciously tart berries are cooked beneath a spiced orange sponge that has a wonderfully soft crumb, before being turned out and brushed with marmalade for a sticky, tangy orange finish.

Flourless chocolate cakes have an intense flavour, yet provide a blank canvas for all sorts of additions and/or substitutions. With our hedgerows producing untold thousands of tonnes of wild blackberries annually, there's rarely been a better time to embrace seasonal adaptations of this kind. To keep berries for longer, store them in a sealed container in the fridge with a sheet of kitchen towel in there to soak up any excess moisture.

Hard candies are essentially made by heating sugar to a precise temperature and cooling it down rapidly so it can set quickly to develop a glassy finish and a firm snap.
