"I want to showcase and voice my story," says Valdez, who grew up in Logan Square. "I want to inspire other Latino kids who have dreams."
"It's labor intensive but you can't replicate that slow roast," he says, referring to the al pastor taco made from thinly sliced pork shoulder.
When his mother, Rosa, fell ill in 2020, Valdez took a sabbatical from restaurants to focus on her care. Her death less than a year later made him rethink his hospitality career.
Pollo al limon, another signature taco, includes marinated grilled chicken thigh that's seared on the plancha to order, topped with onion, cilantro, and avocado.
