One Friday evening after a long work week, I was starved for something good, filling, and quick. I went into my kitchen, started looking around, and got busy. Not only did I create one of the best-tasting spaghetti dinners I've eaten in a long time but, I made it all from start to finish in under an hour.
This spaghetti dinner proves eating healthier doesn't mean you can't have comfort food. Instead of ground beef, the meat sauce is lightened up with ground turkey, filled with flavor from onions, bell peppers, and garlic.
As the sauce simmers, it thickens up beautifully. If you think it's too thick, use water to thin the sauce as needed; we aimed for a light consistency.
Serving the sauce over whole wheat or protein spaghetti offers a hearty and healthy weeknight meal that keeps comfort food in mind without compromising on nutrition.
