Nieves Barragán Mohacho, a prominent figure in London's Spanish food scene, is opening a new restaurant named Legado in Shoreditch this summer. In partnership with JKS Restaurants, Legado will explore diverse regional Spanish dishes and cooking traditions. It aims to draw inspiration from various Spanish cultural elements, including the tabancos, whole-animal cookery, seafood from Galicia, and hearty Asturian stews. Mohacho expressed excitement over sharing her culinary heritage and the stories behind the flavors of Spain through this new venture.
Legado will allow Nieves and her team the space to explore different regional Spanish dishes and dining traditions, influenced by cultures from Cádiz, Castilla y León, and Galicia.
Nieves said, 'It has always been my greatest pleasure to cook food from my country, but many more stories remain about the dishes and flavours that I haven't found outside of Spain.'
