Roast a heritage-style chicken over vegetables using lemon-herb piment d'Espelette compound butter, then deglaze and finish pan drippings into a rich sauce.
According to Ruth Painter Randall, author of "Mary Lincoln: Portrait of a Marriage," per Mr. Lincoln's White House, Mrs. Lincoln specifically asked the cook to prepare "fricasseed chicken and small biscuits with thick cream gravy poured all over it, all on one platter." The cook obliged, and it was such a hit with the president that he had three helpings.
There's nothing like a good beef stew. Every country's got one - Hungarian goulash, Spain's rabo de toro - and they're all worth making at least once. But Julia Child kept coming back to boeuf bourguignon. In "Mastering the Art of French Cooking," she called it "one of the most delicious beef dishes concocted by man." Hard to argue with that. Big chunks of beef, plenty of red wine, smoky bacon, mushrooms, onions - and somehow, it's even better the next day.
