Depending on where a seafood chain is located, diners may prefer certain dishes. One would assume that the state's most popular dish is the lobster roll. And while that may be true for many restaurants, it isn't true for Legal Sea Foods, where diners have fallen in love with its fried fish.

For one night only, local chefs Karlo Evaristo (6100 Bread) and Jared Ventura (Studio at the Montage) resurrected their pandemic-era dining concept, Adia, at Newport Beach's Viamara. According to " TimesOC " writer Sarah Mosqueda, Adia "blends Evaristo's Filipino heritage and cooking experience with Ventura's Italian background and cooking skills to create a multi-course, fine dining menu." For this brief revival, the duo was joined by chef Benjamin Martinek, culinary director of Pendry Newport Beach, making it a rare and wondrous event.

Run by two locals who come from 14 generations of Montauk pro-fishermen, this seafood shop knows its way around shellfish. The lobster roll is worth seeking out: plump with lobster salad that's flecked with celery for crunch. It comes on a soft potato bun, with kettle chips you can crumble on top for more texture.
